Steak with Green Peppercorn Sauce (Braciole con Salsa di
Pepe Verde) Recipe
Ingredients

45 g/3 tbsp butter
-
4 rump or sirloin steaks
-
75 ml/5 tbsp white
wine
-
30 ml/2 tbsp green
peppercorns
-
120 ml/1/2 cup double (heavy) cream
-
30 ml/2 tbsp
mustard
-
15 ml/1 tbsp
chopped fresh parsley
Method:

In a large frying pan (skillet) heat the butter and
add the steaks. Cook until browned on both sides and
cooked to your liking.

Remove the steaks to a warm
plate, and keep warm. Season to taste with salt.
Pour off excess fat.

Return the pan to the heat and
pour in the wine. Cook for 3-4 minutes over a high
heat, then add the peppercorns and cook for 1
minute.

Lower the heat and stir in the cream and
mustard. Place a steak in the centre of each plate
and top with a sprinkling of chopped parsley and
spoon the sauce around the steaks. Serve
immediately.
