Tomato Topped Beef (Manzo con Guarnizione al Pomodoro)

Ingredients

30 ml/2 tbsp oil
-
450 g/1lb cabbage,
shredded
-
2 garlic cloves,
crushed
-
450 g/1lb/4 cups
lean minced (ground) beef
-
15 ml/1 tbsp tomato
puree (paste)
-
10 ml/2 tsp fresh orange juice
-
30 ml/2 tbsp water
-
5 ml/1 tsp fresh
chopped marjoram
-
Salt and freshly
ground black pepper

4 tomatoes, sliced
Method:

Heat the oil in a frying pan (skillet) and fly (sauté)
the cabbage and garlic together for 5 minutes.

Stir
in the minced beef and continue cooking for a
further 10 minutes.

Blend the tomato puree, orange
juice, water and marjoram together and pour over the
mince. Stir well and continue cooking for 5 minutes.
Season.

Arrange the slices of tomato on top of the
cabbage and beef mixture.
-
Cover with a lid and cook
for a further 10 minutes. Serve straight from the
pan.
