Italian Meat Recipes - Tomato Topped Beef (Manzo con Guarnizione al Pomodoro) Recipe

Ingredients

  • 30 ml/2 tbsp oil

  • 450 g/1lb cabbage, shredded

  • 2 garlic cloves, crushed

  • 450 g/1lb/4 cups lean minced (ground) beef

  • 15 ml/1 tbsp tomato puree (paste)

  • 10 ml/2 tsp fresh orange juice

  • 30 ml/2 tbsp water

  • 5 ml/1 tsp fresh chopped marjoram

  • Salt and freshly ground black pepper

  • 4 tomatoes, sliced


Method:

  1. Heat the oil in a frying pan (skillet) and fly (sauté) the cabbage and garlic together for 5 minutes.

  2. Stir in the minced beef and continue cooking for a further 10 minutes.

  3. Blend the tomato puree, orange juice, water and marjoram together and pour over the mince. Stir well and continue cooking for 5 minutes. Season.

  4. Arrange the slices of tomato on top of the cabbage and beef mixture.

  5. Cover with a lid and cook for a further 10 minutes. Serve straight from the pan.
