Italian Meat - Pork, Ham and Sausage Recipes - Torino Ham (Prosciutto Torinese) Recipe

Ingredients

  • 4 aubergines (eggplants)

  • 50 g/2 oz/1/4 cup unsalted (sweet) butter

  • 1 onion, chopped

  • 100 g/4 oz mushrooms, chopped

  • 2 tomatoes, skinned, seeded and chopped

  • 25 g/1 oz/1/2 cup breadcrumbs

  • Salt and freshly ground black pepper

  • 100 g/4 oz prosciutto, chopped

  • 5 ml/1 tsp fresh chopped basil


Method:

  1. Cut the aubergines in half and scoop out the centers. Chop the scooped out flesh.

  2. Heat the butter in a large pan and fry (sauté) the onion and mushrooms for 4 minutes.

  3. Add the tomatoes and chopped aubergines and cook for 3 minutes, stirring.

  4. Sprinkle over the breadcrumbs and season with the salt and pepper. Stir in the prosciutto.

  5. Pile the mixture into the aubergine cases and bake in a preheated oven for 30 minutes at 180°C/350°F/gas mark 4. Sprinkle over the basil before serving.
