Torino Ham (Prosciutto Torinese)
Recipe
Ingredients

4 aubergines
(eggplants)
-
50 g/2 oz/1/4 cup
unsalted (sweet) butter
-
1 onion, chopped
-
100 g/4 oz
mushrooms, chopped
-
2 tomatoes,
skinned, seeded and chopped
-
25 g/1 oz/1/2 cup
breadcrumbs
-
Salt and freshly
ground black pepper
-
100 g/4
oz prosciutto, chopped
-
5 ml/1 tsp fresh
chopped basil
Method:
-
Cut the aubergines in half and scoop out the centers.
Chop the scooped out flesh.

Heat the butter in a
large pan and fry (sauté) the onion and mushrooms
for 4 minutes.
-
Add the tomatoes and chopped aubergines and cook for 3 minutes, stirring.

Sprinkle over the breadcrumbs and season with the
salt and pepper. Stir in the prosciutto.

Pile the
mixture into the aubergine cases and bake in a
preheated oven for 30 minutes at 180°C/350°F/gas
mark 4. Sprinkle over the basil before serving.
