Italian Meat - Poultry and Game Recipes - Turkey Breast with Prosciutto (Petti di Tacchino di Prosciutto) Recipe

Ingredients

  • 4 thin turkey breasts

  • 10 ml/2 tsp plain (all-purpose) flour

  • 2.5 ml/1/2 tsp paprika

  • Salt

  • 75 g/3 oz/1/3 cup unsalted (sweet) butter

  • 4 slices prosciutto

  • 4 slices Mozzarella cheese

  • 30 ml/2 tbsp chopped fresh basil


Method:

  1. Flatten the turkey breasts with a meat mallet. Blend the flour, paprika and salt together and coat the turkey breasts.

  2. Melt the butter in a frying pan (skillet) and add the turkey. Fry (sauté) on both sides to seal.

  3. Cover each slice of turkey with a slice of prosciutto and place a slice of Mozzarella on the top. Cover the pan with a lid.

  4. Increase the heat and cook for 3-5 minutes, or until the cheese has melted slightly.

  5. Transfer to a warm dish and sprinkle over the basil. Serve as soon as possible.
