Turkey Breast Sanremo (Tacchino alla Sanremese)
Recipe
Ingredients
-
4 slices turkey
breast
-
3 canned anchovies
-
50 g/2 oz prosciutto
-
10 ml/2 tsp capers
-
1 garlic clove,
sliced
-
15 ml/1 tbsp pine
nuts
-
30 ml/2 tbsp olive
oil
-
45 ml/3 tbsp fresh
breadcrumbs
-
2 large tomatoes,
skinned, seeded and chopped
-
Salt and freshly
ground black pepper
Method:
-
Flatten the turkey between two sheets of greaseproof
(waxed) paper or Clingfilm
(plastic wrap).

Chop
and mix together the
anchovies, prosciutto, capers, garlic and pine nuts.

Heat the olive oil in a large frying pan (skillet)
and cook the mixed ingredients for 5 minutes. Stir
in the breadcrumbs.

Place the meat on top and cook
for 5 minutes on each side or until the turkey is
cooked through.

Arrange the meat on individual
plates and spoon the contents of the pan over. Serve
at once.
