Italian Meat - Poultry and Game Recipes - Verona Chicken Meat Balls (Polpette di Carne di Pollo Alla Veronese) Recipe

Ingredients

  • 350 g/12 oz/3 cups minced (ground) chicken

  • 30 ml/2 tbsp chopped fresh oregano

  • 15ml/1 tbsp chopped fresh basil

  • 2 eggs

  • 30 ml/2 tbsp unsalted (sweet) butter

  • 100g/4 oz/2 cups breadcrumbs

  • 30ml/2 tbsp double (heavy) cream

  • Salt and freshly ground black pepper

  • 600ml/1 pt/2 1/2 cups chicken stock

  • Tomato Sauce, to serve


Method:

  1. Blend the chicken with the oregano and basil. Mix in the eggs and butter.

  2. Stir in the breadcrumbs and beat in the cream, salt and pepper until the mixture binds together.

  3. Take teaspoons of the mixture and roll into balls. Heat the stock until boiling.

  4. Add the meatballs and simmer for 8 minutes. Remove with a draining spoon and serve with Tomato Sauce.
