Wined Leg of Lamb (Coscia Di Agnello con Vino)

Ingredients

1.5 kg/3lb leg of
lamb
-
30 ml/2 tbsp oil
-
250 ml/1 cup
red wine
-
Salt and freshly
ground black pepper

2 garlic cloves, sliced
-
1 red chili,
seeded and finely chopped
-
100 g/4 oz/2/3 cup black
olives, stoned (pitted)

75 g/3 oz/3/4 cup
Pecorino cheese, grated
Method:
-
Trim the meat of any excess fat. Pour the oil into a flameproof casserole
dish (Dutch oven) and add the leg of lamb.

Cook over
a high heat to seal in the juices. Add the wine,
allowing the alcohol fumes to evaporate for 3
minutes.

Sprinkle well with salt, pepper, sliced
garlic, finely chopped chili and the olives. Stir
well and cover with a lid.

Transfer to a preheated oven
and cook at 180°C/350°F/gas mark 4 for 1 1/4 hours.

Remove and sprinkle the Pecorino cheese thickly over
the meat.

Return to the oven and cook, uncovered,
until the cheese has browned. Serve immediately.
