Italian Offal  & Veal Recipes - Chicken Liver with Sage and Bacon (Fegatini di Pollo con Salvia e Pancetta) Recipe

Ingredients

  • 450 g/1lb/4 cups chicken livers, cleaned

  • 15 ml/1 tbsp chopped fresh sage

  • Salt and freshly ground black pepper

  • 25 g/1 oz/2 tbsp unsalted (sweet) butter

  • 6 bacon rashers (slices), rinded and chopped

  • 45 ml/3 tbsp white wine


Method:

  1. Sprinkle the liver with the sage, salt and pepper and set aside.

  2. Place the butter in a frying pan (skillet) and cook the bacon pieces.

  3. Add the chicken livers to the pan and cook, stirring for 6 minutes.

  4. Pour in the wine and simmer for 5 minutes. Remove from the pan and serve at once.
