Chicken Liver with Sage and Bacon (Fegatini di Pollo con
Salvia e Pancetta)

Ingredients

450 g/1lb/4 cups
chicken livers, cleaned
-
15 ml/1 tbsp chopped
fresh sage
-
Salt and freshly
ground black pepper
-
25 g/1 oz/2 tbsp unsalted
(sweet) butter
-
6 bacon rashers (slices), rinded and chopped
-
45 ml/3 tbsp white
wine
Method:
-
Sprinkle the liver with the sage, salt and pepper
and set aside.

Place the butter in a frying pan
(skillet) and cook the bacon pieces.
-
Add the chicken
livers to the pan and cook, stirring for 6 minutes.
-
Pour in the wine and simmer for 5 minutes. Remove
from the pan and serve at once.
