Italian Offal  & Veal Recipes - Kidneys in Cream (Rognoni in Crema) Recipe

Ingredients

  • 15 ml/1 tbsp olive oil

  • 1 small onion, chopped

  • 100 g/4 oz lambs' kidneys, skinned and cored

  • 2 eggs, hard-boiled (hard cooked) and shelled

  • 150 ml/2/3 cup double (heavy) cream

  • 15 ml/1 tbsp chopped fresh sage

  • Salt and freshly ground black pepper

  • Plain boiled rice, to serve


Method:

  1. Heat the oil, add the chopped onion and cook until the onion is translucent.

  2. Cut the kidneys into 1 cm/1/2 in pieces and add to the pan. Cook for 5 minutes, stirring.

  3. Chop the egg and add to the kidneys with the cream and mix well.

  4. Add the sage and season with the salt and pepper. Serve on a bed of rice.
