Kidneys in Cream (Rognoni in Crema)

Ingredients

15 ml/1 tbsp olive
oil
-
1 small onion,
chopped
-
100 g/4 oz lambs'
kidneys, skinned and cored
-
2 eggs, hard-boiled
(hard cooked) and shelled
-
150 ml/2/3 cup
double (heavy) cream
-
15 ml/1 tbsp
chopped fresh sage
-
Salt and freshly ground black
pepper
-
Plain boiled rice, to serve
Method:

Heat the oil, add the chopped onion and cook until
the onion is translucent.

Cut the kidneys into 1
cm/1/2 in pieces and add to the pan. Cook for 5
minutes, stirring.

Chop the egg and add to the
kidneys with the cream and mix well.

Add the sage
and season with the salt and pepper. Serve on a bed
of rice.
