Italian Offal  & Veal Recipes - Lamb's Liver with Chopped Vegetables (Fegato di Agnello con Verdura Tagliuzzata) Recipe

Ingredients

  • 45 ml/3 tbsp olive oil

  • 1 small onion, chopped

  • 1 garlic clove, chopped

  • 1 celery stick, chopped

  • 225 g/8 oz lambs' liver

  • 30 ml/2 tbsp white wine

  • 30 ml/2 tbsp tomato puree (paste)

  • 15 ml/1 tbsp capers, chopped


Method:

  1. Heat the oil and fry (sauté) the onion, garlic and celery stick for 2 minutes.

  2. Slice the lambs' liver thinly and add to the vegetables. Cook for 5 minutes and stir in the wine, tomato puree and capers.

  3. Cook for 1 minute until the mixture has thickened.
