Liver in Garlic Butter (Fegato in Burro e Aglio)

Ingredients

50 g/2 oz/1/4 cup
unsalted (sweet) butter
-
3 garlic cloves,
crushed
-
225 g/8 oz calves'
liver
-
15 ml/1 tbsp chopped
fresh thyme
-
1 egg, beaten
-
25 g/1 oz/1/2 cup
breadcrumbs
Method:
-
Heat the butter in a frying pan (skillet) and cook
the garlic for 1 minute, stirring.
-
Slice the liver
thinly. Beat the thyme into the egg and dip the
liver slices into it.
-
Place the breadcrumbs on a
plate and coat the liver
thoroughly.
Cook
for 4 minutes in the garlic
butter, turning once.
