Milanese-style Veal Escalope (Scaloppa di Vitello alla
Milanese)

Ingredients

4 veal escallops
-
Plain (all-purpose)
flour
-
Salt and freshly
ground black pepper
-
1 large egg, beaten
-
75 g/3 oz/1 1/2
cups fresh breadcrumbs
-
100 g/4 oz/1/2 cup unsalted
(sweet) butter
-
Lemon wedges and
parsley sprigs, to garnish
Method:
-
Put a veal escalope between two sheets of Clingfilm
(plastic wrap) and flatten with a meat mallet or
rolling pin.
-
Repeat with the remaining escallops.
Dust with flour then sprinkle with salt and pepper.

Dip in the beaten egg then breadcrumbs to coat
completely.
-
Fry (sauté) in the butter until golden
brown on both sides and cooked through. Drain on
kitchen paper.

Serve garnished with lemon wedges and
parsley sprigs.
