Italian Offal  & Veal Recipes - Milanese-style Veal Escalope (Scaloppa di Vitello alla Milanese) Recipe

Ingredients                 

  • 4 veal escallops

  • Plain (all-purpose) flour

  • Salt and freshly ground black pepper

  • 1 large egg, beaten

  • 75 g/3 oz/1 1/2 cups fresh breadcrumbs

  • 100 g/4 oz/1/2 cup unsalted (sweet) butter

  • Lemon wedges and parsley sprigs, to garnish


Method:

  1. Put a veal escalope between two sheets of Clingfilm (plastic wrap) and flatten with a meat mallet or rolling pin.

  2. Repeat with the remaining escallops. Dust with flour then sprinkle with salt and pepper.

  3. Dip in the beaten egg then breadcrumbs to coat completely.

  4. Fry (sauté) in the butter until golden brown on both sides and cooked through. Drain on kitchen paper.

  5. Serve garnished with lemon wedges and parsley sprigs.
