Italian Offal  & Veal Recipes - Parmesan Veal Cutlets (Costolette di Vitello alla Parmigiana) Recipe

Ingredients

  • 450 g/1lb very thin veal cutlets

  • 15 g/1 tbsp unsalted (sweet) butter, melted

  • 225 g/8 oz Mouarella cheese, thinly sliced

  • 175 ml/6 fl oz/3/4 cup Tomato Sauce

  • 5 ml/1 tsp chopped fresh thyme

  • 50 g/2 oz/1/2 cup Parmesan cheese, grated


Method:

  1. Brush the cutlets with the melted butter and place under a moderate grill (broiler) for 3 minutes on each side.

  2. Brush with butter again and add a thin slice of Mozzarella to each cutlet.

  3. Grill (broil) until the cheese is brown. Place in a hot dish and top with the tomato sauce.

  4. Sprinkle over the thyme and Parmesan and bake in a preheated oven at 190°C/375°F/ gas mark 5 for 15 minutes.
