Italian Offal  & Veal Recipes - Pig's Liver Brochettes (Fegatelli di Maiale) Recipe

Ingredients

  • 15 ml/1 tbsp fennel seeds

  • Salt and freshly ground black pepper

  • 8 rashers (slices) bacon, rinded and halved

  • 450 g/1lb pigs' liver, cut into about 16 cubes

  • 4 thick pieces Italian bread, cut into chunks

  • 60 ml/4 tbsp olive oil

  • A handful of fresh sage leaves


Method:

  1. Crush the fennel seeds in a mortar with the salt and pepper. Wrap a piece of bacon around each cube of liver.

  2. Dip the bread into the olive oil. Thread the liver on to 4 skewers, alternately with sage leaves and chunks of bread.

  3. Grill (broil) the kebabs for 10 minutes under a hot grill until cooked to your liking, turning frequently and basting with a little more oil if necessary. Garnish with sage leaves and serve.
