Italian Offal  & Veal Recipes - Veal Cutlets (Costolette di Vitello) Recipe

Ingredients

                  

  • 4 boneless veal cutlets

  • 100 g/4 oz cooked ham

  • 4 slices Gruyere (Swiss) cheese

  • 50 g/2 oz/1/4 cup unsalted (sweet) butter

  • 250 ml/1 cup dry white wine

  • Freshly ground black pepper

  • 12 stoned (pitted) olives, sliced


Method:

  1. Pound the cutlets until 5 mm/1/4 in thick. Shred the ham into thin slices. Arrange over the cutlets.

  2. Place a slice of cheese over each cutlet and roll up so that the cheese is on the inside of the veal.

  3. Melt the butter in an ovenproof dish and put in the veal cutlets. Pour over the wine and sprinkle with the pepper.

  4. Place in a preheated oven at 190°C/375°F/gas mark 5 for 25-30 minutes. Scatter the olives over and serve.
