Italian Offal  & Veal Recipes - Veal with Gorgonzola (Vitello con Gorgonzola) Recipe

Ingredients

  • 50 g/2 oz/1/4 cup unsalted (sweet) butter

  • 50 g/2 oz Gorgonzola cheese, crumbled

  • 4 veal escallops

  • 50 g/2 oz/1/2 cup plain (all-purpose) flour

  • 2.5 ml/1/2 tsp cayenne

  • Salt and freshly ground black pepper

  • 1 egg, beaten

  • 50 g/2 oz/1 cup fresh breadcrumbs

  • 45 ml/3 tbsp oil


Method:

  1. Soften the butter and blend with the Gorgonzola. Spread the cheese and butter mixture over both sides of the escalope.

  2. Put the flour into a large bowl and season with the cayenne, salt and pepper.

  3. Coat the veal in the seasoned flour, then the egg and finally the breadcrumbs. Chill for 1 hour.

  4. Heat the oil in a frying pan (skillet). Fry (sauté) the escalope for 3-4 minutes on each side or until they are golden brown and cooked through. Serve immediately.
