Veal with Gorgonzola (Vitello con Gorgonzola)

Ingredients

50 g/2 oz/1/4 cup
unsalted (sweet) butter
-
50 g/2 oz
Gorgonzola cheese, crumbled
-
4 veal escallops
-
50 g/2 oz/1/2 cup
plain (all-purpose) flour
-
2.5 ml/1/2 tsp cayenne
-
Salt and freshly
ground black pepper
-
1 egg, beaten
-
50 g/2 oz/1 cup
fresh breadcrumbs
-
45 ml/3 tbsp oil
Method:
-
Soften the butter and blend with the Gorgonzola.
Spread the cheese and butter mixture over both sides
of the escalope.

Put the flour into a large bowl
and season with the cayenne, salt and pepper.

Coat
the veal in the seasoned flour, then the egg and
finally the breadcrumbs. Chill for 1 hour.

Heat the
oil in a frying pan (skillet). Fry (sauté) the
escalope for 3-4 minutes on each side or until they
are golden brown and cooked through. Serve
immediately.
