Italian Offal  & Veal Recipes - Veal with Lemon and Capers (Scaloppine con Limone e Capperi) Recipe

Ingredients                 

  • 30 ml/1 tbsp plain (all-purpose) flour

  • Salt and freshly ground black pepper

  • 1.5 ml/1/4 tsp cayenne

  • 4 veal escallops, flattened

  • 25 g/1 oz/2 tbsp unsalted (sweet) butter

  • 15 ml/1 tbsp olive oil

  • Juice of 1 lemon

  • 75 ml/5 tbsp dry white wine

  • 15 ml/1 tbsp capers, chopped


Method:

  1. Mix the flour, salt, pepper and cayenne and coat the veal.

  2. Heat the butter and oil and fry (sauté) the escallops for 2-3 minutes until golden. Transfer to a dish and keep warm.

  3. Heat the lemon juice and wine in the pan for 1 minute. Add the capers and seasoning, heat for 1 minute and pour over the veal.
