Veal with Lemon and Capers (Scaloppine con Limone e
Capperi)

Ingredients

30 ml/1 tbsp plain
(all-purpose) flour
-
Salt and freshly ground black
pepper
-
1.5 ml/1/4 tsp cayenne
-
4 veal
escallops, flattened
-
25 g/1 oz/2 tbsp
unsalted (sweet) butter
-
15 ml/1 tbsp olive oil
-
Juice of 1 lemon
-
75 ml/5 tbsp dry
white wine
-
15 ml/1 tbsp
capers, chopped
Method:
-
Mix the flour, salt,
pepper and cayenne and coat the veal.
-
Heat the
butter and oil and fry (sauté) the escallops for 2-3
minutes until golden. Transfer to a dish and keep
warm.

Heat the lemon juice and wine in the pan for
1
minute. Add the capers and seasoning, heat for 1
minute and pour over the veal.
