Italian Offal  & Veal Recipes - Veal and Mushrooms (Vitello e Funghi) Recipe

Ingredients

                  

  • 50 g/2 oz/1/4 cup unsalted (sweet) butter

  • 4 veal chops

  • 2 rashers (slices) streaky bacon, rinded and chopped

  • 4 shallots, chopped

  • 100 g/4 oz button mushrooms, sliced

  • 15 ml/1 tbsp plain (all-purpose) flour

  • 120 ml/1/2 cup white wine

  • 250 ml/1 cup veal stock

  • 1 bay leaf

  • 10 ml/2 tsp fresh chopped herbs

  • Salt and freshly ground black pepper

  • 120 ml/1/2 cup single (light) cream


Method:

  1. Melt the butter in a saucepan and add the chops. Fry (sauté) on both sides until brown. Transfer to a warmed dish.

  2. Add the bacon to the pan with the shallots and mushrooms. Cook for 4-5 minutes until the bacon is crisp.

  3. Stir in the flour and cook for 30 seconds. Add the wine, stock, bay leaf and fresh herbs. Season with the salt and pepper and bring to the boil.

  4. Return the chops to the pan and simmer for 35 minutes until the chops are tender. Stir in the cream and serve at once.
