Italian Offal  & Veal Recipes - Veal Patties in Wine Sauce (Tortini di Vitello in Salsa di Vino) Recipe

Ingredients                  

  • 450 g/1 lb lean veal

  • 1 large onion

  • 1 garlic clove, crushed

  • Salt and freshly ground black pepper

  • 50 g/2 oz/1 cup breadcrumbs

  • 1 egg, lightly beaten

  • 45 ml/3 tbsp chopped fresh oregano

  • 45 ml/3 tbsp plain (all-purpose) flour

  • 50 g/2 oz/1/4 cup unsalted (sweet) butter

  • 90 ml/6 tbsp dry white wine

  • 150 ml/2/3 cup double (heavy) cream


Method:

  1. Mince (grind) the veal with the onion and place in a large bowl. Stir in the garlic, salt and pepper and stir in the breadcrumbs and egg.

  2. Add half of the oregano and blend well. Shape the mixture into 8 patties and coat with the flour.

  3. Melt the butter and fry (sauté) the patties for 8 minutes on each side. Transfer to a warmed serving dish and keep hot.

  4. Pour the wine into the pan and bring to the boil. Reduce the heat and stir in the cream.

  5. Bring back to the boil and cook for 2 minutes until the sauce is hot and has thickened. Pour the sauce over the patties and serve at once.
