Italian Offal  & Veal Recipes - Veal with Rice (Vitello con Riso) Recipe

Ingredients                 

  • 100 g/4 oz/1 cup chicken livers, chopped

  • 1 small onion, chopped

  • 150 g/5 oz/1 1/4 cups cooked rice

  • Salt and freshly ground black pepper

  • 1 kg/2 1/4 lb breast or shoulder of veal, boned

  • 50 g/2 oz/1/4 cup unsalted (sweet) butter


Method:

  1. Chop the chicken livers and blend with the chopped onion and rice. Season with the salt and pepper, Open out the meat and stuff with the mixture.

  2. Tie into shape with string. Place in a roasting tin (pan) and dot with the butter.

  3. Cook the meat in a preheated oven at 180°C/350°P/gas mark 4 for 2 hours, basting occasionally with the juices in the pan.
