Italian Offal  & Veal Recipes - Wine Chops (Braciole al Vino) Recipe

Ingredients

  • 45 ml/3 tbsp plain (all-purpose) flour

  • Salt and freshly ground black pepper

  • 5 ml/1 tsp chopped fresh thyme

  • 4 thick veal chops

  • 60 ml/4 tbsp olive oil

  • 100 g/4 oz mushrooms, sliced

  • 1 onion, sliced

  • 250 ml/1 cup white wine


Method:

  1. Season the flour with salt, pepper and thyme. Use to coat the veal chops. Heat the oil and brown the chops on both sides.

  2. Remove to a casserole dish (Dutch oven). Add the mushrooms and onion to the frying pan (skillet) and cook for 3 minutes.

  3. Add to the casserole. Pour the wine into the pan, simmer for 5 minutes then pour over the chops.

  4. Cover and cook in a preheated oven at 200°C/400°F/gas mark 6 for 40 minutes.
