Italian Pasta Recipes - Asparagus Cream with Pasta (Crema di Asparagi con Pasta) Recipe

Ingredients                     

  • 450 g/1lb asparagus

  • 300 ml/1 1/4 cups single (light) cream

  • Salt and freshly ground black pepper

  • 450 g/1lb fresh pasta

  • 15 ml/1 tbsp Parmesan cheese, grated


Method:

  1. Trim the asparagus and cut off the tips to use for decoration. Cook the asparagus for 10 minutes until tender. Drain and reserve the cooking liquid.

  2. Puree the stalks with the cream in a blender or food processor and return to a clean saucepan.

  3. Reheat gently and season with the salt and pepper. Place the pasta in a large saucepan of boiling, salted water and cook for 3-4 minutes until al dente.

  4. Drain well. Spoon the pasta on to 6 hot plates and pour the sauce over the pasta.

  5. Arrange the asparagus tips on top. Sprinkle with the Parmesan and serve immediately.
