Italian Pasta Recipes - Bacon Bake (Pancetta al Forno) Recipe

Ingredients                     

  • 225 g/8 oz pasta shapes

  • 4 bacon chops

  • 400g/14 oz/1 large can chopped tomatoes

  • 5 ml/1 tsp chili sauce

  • 15 ml/1 tbsp chopped fresh oregano

  • 225 g/8 oz fresh or frozen peas

  • 50 g/2 oz/1 cup fresh breadcrumbs

  • 75 g/3 oz/3/4 cup hard cheese, grated

  • Salt and freshly ground black pepper


Method:

  1. Bring a large pan of salted water to the boil and cook the pasta until firm but tender. Drain well.

  2. Grill the bacon chops for 4 minutes on each side and cut into chunks. Mix the tomatoes with the chili sauce and oregano.

  3. Layer the pasta in an ovenproof dish with the tomatoes, bacon and peas, seasoning each layer.

  4. Mix together the breadcrumbs and cheese and sprinkle over the top.

  5. Bake for 25 minutes in a preheated oven at 200°C/400°F/gas mark 6 until golden brown on the top.
