Baked Gnocchi in
Tomato Sauce (Gnocchi al Forno con Salsa di Pomodoro) Recipe
Ingredients

4 egg yolks
-
10 ml/2 tsp sugar
-
50 g/2 oz/1/2 cup
plain (all-purpose) flour
-
30 ml/2 tbsp corn flour
(cornstarch)

Salt and freshly ground black pepper

g/2 oz/1/4 cup unsalted (sweet) butter
-
100 g/4 oz/1
cup Parmesan cheese, grated

450 ml/2
cups milk
-
Tomato Sauce, to serve
Method:
-
Place the egg yolks
and sugar in a saucepan and beat until creamy.

Sift
the flour and corn flour into a mixing bowl and
gradually add to the creamy mixture, beating
constantly. Season to taste.

Stir in half of the
butter and three-quarters of the cheese. Place the
pan over a low heat and gradually add the milk,
stirring constantly.

Cook for 3 minutes until the
mixture has thickened. Remove the pan from the heat.

Pour the mixture into a large flat dish and smooth
out the surface. Chill for 25-30 minutes.

Grease an
ovenproof dish with the remaining butter. Cut the
gnocchi into 4 cm/1 1/2 in squares and overlap in the
baking dish.

Sprinkle them with the remaining
cheese and bake in a preheated oven at
190°C/375°F/gas mark 5 for 20 minutes. Serve
with the sauce poured over the top.
