Baked Macaroni (Maccheroni
al Forno) Recipe
Ingredients

15 g/1 tbsp
unsalted (sweet) butter
-
15 ml/ tbsp olive
oil
-
100 g/4 oz
mushrooms, chopped
-
4 large tomatoes,
sliced
-
30 ml/2 tbsp
chopped fresh parsley
-
225 g/8 oz large macaroni
-
175 ml/3/4
cup Basic White
-
75 g/3 oz/3/4 cup
Pecorino cheese, grated

Salt and freshly ground
black pepper
Method:
-
Heat half the butter with the oil in a pan and cook
the mushrooms for 5 minutes until browned.

Add the
tomatoes and parsley. Stir in 120 ml/1/2 cup
water and
simmer for 3 minutes.

Cook
the macaroni
in a large pan of boiling, salted water until al
dente. Drain.
-
Butter an ovenproof dish and turn
the macaroni into it. Pour over the white sauce and
then the
mushroom mixture.
-
Sprinkle over the cheese and
season with the salt and pepper. Bake in a
preheated oven at 180°C/350°F/gas mark 4 for 30
minutes.
