Italian Pasta Recipes - Baked Macaroni (Maccheroni al Forno) Recipe

Ingredients

  • 15 g/1 tbsp unsalted (sweet) butter      

  • 15 ml/ tbsp olive oil

  • 100 g/4 oz mushrooms, chopped

  • 4 large tomatoes, sliced

  • 30 ml/2 tbsp chopped fresh parsley

  • 225 g/8 oz large macaroni

  • 175 ml/3/4 cup Basic White

  • 75 g/3 oz/3/4 cup Pecorino cheese, grated

  • Salt and freshly ground black pepper


Method:

  1. Heat half the butter with the oil in a pan and cook the mushrooms for 5 minutes until browned.

  2. Add the tomatoes and parsley. Stir in 120 ml/1/2 cup water and simmer for 3 minutes.

  3. Cook the macaroni in a large pan of boiling, salted water until al dente. Drain.

  4. Butter an ovenproof dish and turn the macaroni into it. Pour over the white sauce and then the mushroom mixture.

  5. Sprinkle over the cheese and season with the salt and pepper. Bake in a preheated oven at 180°C/350°F/gas mark 4 for 30 minutes.
