Baked Pasta
Ribbons in Meat Sauce (Pappardelle al Forno con Sugo di
Carne) Recipe
Ingredients
-
450 g/4 cups
plain (all-purpose) flour
-
1.5 ml/1/4 tsp salt
-
4 eggs
-
30 ml/2 tbsp milk
-
175 ml/6 fl oz/3/4 cup
Meat Sauce
-
175 g/6 oz
Mozzarella cheese, sliced thinly
-
Salt and
freshly ground black pepper

50 g/2 oz/1/2 cup
Parmesan cheese, grated
Method:

Sift the flour and salt in a bowl and blend in the eggs and milk. Knead
very thoroughly until smooth.

Cover the bowl with a
cloth and leave to rest for 30 minutes. Roll out the
dough thinly and cut into long strips about 2 cm/3/4
in wide.

Hang up to dry or place over a clean cloth
on the back of
a chair for 15 minutes.
Cook
in boiling, salted water for 4-5
minutes until tender.

Drain and put a layer of half
the pasta into a buttered ovenproof dish. Add a
layer of meat sauce and cover with all the cheese slices.

Season with salt and pepper and repeat the layers, ending with
the Parmesan cheese.

Bake for 20 minutes in a
preheated oven at 200°C/400°F/gas mark 6.
