Italian Pasta Recipes - Baked Pasta Ribbons in Meat Sauce (Pappardelle al Forno con Sugo di Carne) Recipe

Ingredients                     

  • 450 g/4 cups plain (all-purpose) flour

  • 1.5 ml/1/4 tsp salt

  • 4 eggs

  • 30 ml/2 tbsp milk

  • 175 ml/6 fl oz/3/4 cup Meat Sauce

  • 175 g/6 oz Mozzarella cheese, sliced thinly

  • Salt and freshly ground black pepper

  • 50 g/2 oz/1/2 cup Parmesan cheese, grated


Method:

  1. Sift the flour and salt in a bowl and blend in the eggs and milk. Knead very thoroughly until smooth.

  2. Cover the bowl with a cloth and leave to rest for 30 minutes. Roll out the dough thinly and cut into long strips about 2 cm/3/4 in wide.

  3. Hang up to dry or place over a clean cloth on the back of a chair for 15 minutes. Cook in boiling, salted water for 4-5 minutes until tender.

  4. Drain and put a layer of half the pasta into a buttered ovenproof dish. Add a layer of meat sauce and cover with all the cheese slices.

  5. Season with salt and pepper and repeat the layers, ending with the Parmesan cheese.

  6. Bake for 20 minutes in a preheated oven at 200°C/400°F/gas mark 6.
