Bel Paese Quills
(Penne al Bel Paese) Recipe
Ingredients

15 ml/1 tbsp olive
oil
-
1 garlic clove,
crushed
-
1 celery stick,
chopped
-
15 ml/1 tbsp tomato
puree (paste)

3 tomatoes, skinned
and chopped

Salt and freshly ground black pepper

225
g/8 oz Italian sausages, thinly sliced
-
350 g/12 oz penne
-
225 g/8 oz Bel
Paese cheese, sliced
Method:

Heat half the oil and
add the garlic and celery. Cook for 2 minutes,
stirring.

Add the tomato puree, reduce the heat and
stir in the tomatoes. Season with the salt and
pepper and simmer for 30 minutes. Set aside.

Heat
the remaining oil and fry (sauté) the sausages until
brown. Bring a large pan of salted water to the boil
and cook the pasta for 8-10 minutes until al
dente. Drain well.

Spoon the penne into an
ovenproof dish and add the sausages. Pour over the
sauce and top with the cheese slices.

Bake in a
preheated oven at 180°C/350°F/gas mark 4 for
20 minutes.
