Italian Pasta Recipes - Broad Bean and Cream Pasta (Fave e Pasta alla Crema) Recipe

Ingredients                     

  • 15 ml/1 tbsp olive oil

  • 25 g/1 oz/2 tbsp unsalted (sweet) butter

  • 100 g/4 oz mushrooms, sliced

  • 225 g/8 oz fresh or frozen broad (lima) beans

  • 45 ml/3 tbsp water

  • 350 g/12 oz spaghettini

  • 150 ml/2/3 cup double (heavy) cream

  • 100 g/4 oz/1 cup Mozzarella cheese, grated

  • 15 ml/1 tbsp chopped fresh thyme

  • Salt and freshly ground black pepper


Method:

  1. Heat the oil and butter in a saucepan and add the mushrooms.

  2. Fry (sauté) for 2 minutes and stir in the broad beans and water. Cover and cook for 15 minutes.

  3. Meanwhile, cook the pasta in boiling, salted water until just tender. Drain and transfer to a heated serving dish.

  4. Lower the heat under the saucepan and blend in the cream, Mozzarella, and thyme.

  5. Season with salt and pepper and spoon over the spaghettini.
