Broad Bean and
Cream Pasta (Fave e Pasta alla Crema) Recipe
Ingredients

15 ml/1 tbsp olive
oil
-
25 g/1 oz/2 tbsp
unsalted (sweet) butter
-
100 g/4 oz mushrooms, sliced
-
225 g/8 oz fresh or
frozen broad (lima) beans
-
45 ml/3 tbsp water
-
350 g/12 oz spaghettini
-
150 ml/2/3
cup double (heavy) cream
-
100 g/4 oz/1 cup Mozzarella
cheese, grated
-
15 ml/1 tbsp chopped
fresh thyme
-
Salt and freshly ground black pepper
Method:
-
Heat the oil and butter in a saucepan and add the mushrooms.

Fry (sauté)
for 2 minutes and stir in the broad beans and
water. Cover and cook for 15 minutes.
-
Meanwhile,
cook the pasta in boiling, salted water until just
tender. Drain and transfer to a heated serving
dish.
-
Lower the heat under the saucepan and blend in
the cream, Mozzarella, and thyme.
-
Season with salt
and pepper and spoon over the spaghettini.
