Capellini Chicken
Livers (Fegattini di Pollo con Capellini) Recipe
Ingredients

30 ml/2 tbsp olive
oil
-
50 g/2 oz/1/4 cup
unsalted (sweet) butter
-
3 garlic cloves, crushed
-
450 g/1lb/4 cups
chicken livers, trimmed and chopped
-
15 ml/1 tbsp
chopped fresh parsley
-
Salt and freshly ground black
pepper
-
225 g/8 oz capellini
Method:

Heat half the oil and
the butter and cook the crushed garlic for a few
seconds. Add the chicken livers and parsley.

Season
with salt and pepper and cook for 2-3 minutes until
pink and juicy.

Remove from the heat. Add the
remaining oil to the pan of boiling water and add
the pasta.

Cook for 8-10 minutes until tender but
still firm. Drain.

Return the pasta to the pan and
stir in the livers and parsley. Toss until piping
hot. Serve immediately.
