Italian Pasta Recipes - Capellini Chicken Livers (Fegattini di Pollo con Capellini) Recipe

Ingredients                     

  • 30 ml/2 tbsp olive oil

  • 50 g/2 oz/1/4 cup unsalted (sweet) butter

  • 3 garlic cloves, crushed

  • 450 g/1lb/4 cups chicken livers, trimmed and chopped

  • 15 ml/1 tbsp chopped fresh parsley

  • Salt and freshly ground black pepper

  • 225 g/8 oz capellini


Method:

  1. Heat half the oil and the butter and cook the crushed garlic for a few seconds. Add the chicken livers and parsley.

  2. Season with salt and pepper and cook for 2-3 minutes until pink and juicy.

  3. Remove from the heat. Add the remaining oil to the pan of boiling water and add the pasta.

  4. Cook for 8-10 minutes until tender but still firm. Drain.

  5. Return the pasta to the pan and stir in the livers and parsley. Toss until piping hot. Serve immediately.
