Italian Pasta Recipes - Carrot Pasta (Carote Fettuccine) Recipe

Ingredients                     

  • 225 g/8 oz fettuccine

  • 15 ml/1 tbsp olive oil

  • 450 g/1lb carrots, grated

  • Salt and freshly ground black pepper

  • 120 ml/4 fl oz/1/2 cup single (light) cream

  • 15 ml/1 tbsp chopped fresh parsley

  • 75 g/3 oz/3/4 cup Parmesan cheese, grated


Method:

  1. Cook the fettuccine in boiling, lightly salted water for 8-10 minutes until tender but firm. Drain.

  2. Meanwhile, heat the oil in a frying pan (skillet) and cook the carrots with a little salt and pepper for 1 minute to soften.

  3. Stir in the cream and add the parsley. Cook for 4 minutes.

  4. Spoon over the fettuccine and sprinkle over the Parmesan cheese. Serve immediately.
