Carrot Pasta (Carote
Fettuccine) Recipe
Ingredients

225 g/8 oz fettuccine
-
15 ml/1 tbsp olive
oil
-
450 g/1lb carrots,
grated
-
Salt and freshly
ground black pepper

120 ml/4 fl oz/1/2 cup single
(light) cream
-
15 ml/1 tbsp chopped fresh parsley

g/3 oz/3/4 cup Parmesan cheese, grated
Method:

Cook the fettuccine in boiling, lightly salted water for 8-10 minutes
until tender but firm. Drain.

Meanwhile, heat the
oil in a frying pan (skillet) and cook the carrots
with a little salt and pepper for 1 minute to
soften.

Stir in the cream and add the parsley. Cook
for 4 minutes.

Spoon over the fettuccine and
sprinkle over the Parmesan cheese. Serve
immediately.
