Italian Pasta Recipes - Cheese Filling for Pasta (Ripieno di Formaggio per Pasta) Recipe

Ingredients

• 225 g/8 oz/1 cup Ricotta cheese        

• 75 g/3 oz/3/4 cup hard cheese, grated

• 2 eggs

• 2.5 ml/1/2 tsp sugar

• Salt and freshly ground black pepper
• 15 ml/1 tbsp chopped fresh parsley

Method:

1. Combine all the ingredients in a blender and blend on a low speed until smooth and creamy.

2. Use as a filling for large cannelloni or manicotti.
