Chicken Bolognese
(Pollo alla Bolognese) Recipe
Ingredients

2 large onions,
chopped
-
25 g/1 oz/2 tbsp
unsalted (sweet) butter
-
2 garlic cloves, crushed
-
450 g/1lb boneless
chicken breasts, finely chopped
-
Salt and freshly
ground black pepper

50 ml/2 fl oz/3 1/2 tbsp white
wine
-
400 g/14 oz/1large
can chopped tomatoes
-
5 ml/1 tsp chopped
fresh oregano
-
350 g/12 oz spaghetti
-
30 ml/2 tbsp olive
oil
-
Salt and freshly
ground black pepper

75 g/3 oz/3/4 cup
Parmesan cheese, grated
Method:
-
Fry (sauté) the onions in the butter until they are translucent then stir
in the garlic and chicken. Season well with the salt
and pepper.

Cook, stirring, for 3 minutes. Blend in
the white wine, tomatoes and oregano and stir
thoroughly. Simmer for 20 minutes, stirring
regularly.

Bring a pan of salted water to the boil
and cook the spaghetti for 8-10 minutes or until
tender but firm. Drain the spaghetti, return to the
saucepan and add the oil.

Toss the spaghetti in the
oil, season with salt and pepper and add half the
grated cheese and the chicken sauce.

Toss over a
gentle heat and serve immediately, sprinkled with
the remaining cheese.
