Italian Pasta Recipes - Chicken Cannelloni (Cannelloni con Pollo) Recipe

Ingredients

  • 350 g/12 oz/3 cups plain (all-purpose) flour

  • Salt and freshly ground black pepper

  • 2 eggs

  • 225 g/8 oz boneless chicken breasts

  • 1 large onion

  • 15 ml/1 tbsp chopped fresh oregano

  • Tomato Sauce, to serve


Method:

  1. Put the flour and a little salt and pepper into a bowl. Beat the eggs and mix into the flour.

  2. Mix with enough cold water to form a firm dough. Knead well. Roll out on a floured board and cut into thin rounds the size of a saucer.

  3. Mince (grind) the chicken breasts and onion together and blend with the oregano. Season with the salt and pepper.

  4. Spread a little mixture on each round of dough and wet the edges of the dough with water. Roll up firmly.

  5. Place each cannelloni carefully into a pan of boiling water and boil for 8-10 minutes. Drain well and serve with Tomato Sauce.
