Chicken Omelet and
Pasta (Frittata di Pollo e Pasta) Recipe
Ingredients
-
60 ml/4 tbsp olive
oil
-
2 carrots, diced
-
1 onion, chopped
-
225 g/8 oz/2 cups
cooked chicken, diced
-
1 red (bell) pepper, diced
-
Salt and freshly
ground black pepper
-
2 eggs
-
300 ml/1 1/4
cups milk
-
225 g/8 oz pasta
spirals
Method:
-
Place half the oil, the
carrots, onion, chicken, red pepper and a little
salt and pepper in a frying pan (skillet) and cook
rapidly for 5 minutes.

Beat the eggs and milk
together in a bowl and pour into the frying pan.
Cook gently for 15 minutes until set.

Bring a large
pan of salted water to the boil and cook the pasta
spirals for 10 minutes until tender.
-
Drain and place
in a warmed serving dish. Toss in the remaining oil
and a
good
grinding of pepper.

Cut the frittata into wedges and serve with the pasta.
