Italian Pasta Recipes - Chicken Omelet and Pasta (Frittata di Pollo e Pasta) Recipe

Ingredients                     

  • 60 ml/4 tbsp olive oil

  • 2 carrots, diced

  • 1 onion, chopped

  • 225 g/8 oz/2 cups cooked chicken, diced

  • 1 red (bell) pepper, diced

  • Salt and freshly ground black pepper

  • 2 eggs

  • 300 ml/1 1/4 cups milk

  • 225 g/8 oz pasta spirals


Method:

  1. Place half the oil, the carrots, onion, chicken, red pepper and a little salt and pepper in a frying pan (skillet) and cook rapidly for 5 minutes.

  2. Beat the eggs and milk together in a bowl and pour into the frying pan. Cook gently for 15 minutes until set.

  3. Bring a large pan of salted water to the boil and cook the pasta spirals for 10 minutes until tender.

  4. Drain and place in a warmed serving dish. Toss in the remaining oil and a good grinding of pepper.

  5. Cut the frittata into wedges and serve with the pasta.
