Italian Pasta Recipes - Chicken and Walnut Tagliatelle (Tagliatelle con Pollo e Noci) Recipe

Ingredients             

  • 350 g/12 oz tagliatelle

  •   225 g/8 oz/2 cups cooked chicken meat, cut in small strips

  • 60 ml/4 tbsp Mascarpone cheese

  • 2.5 ml/1/2 tsp grated nutmeg

  • 100 g/4 oz/1 cup walnuts, roughly chopped

  • Salt and freshly ground black pepper

Method:

  1. Bring a large pan of salted water to the boil and cook the tagliatelle for 8-10 minutes until tender. Drain and return to the pan.

  2. Gently mix in the Mascarpone and nutmeg and toss well over a gentle heat. Add the chicken and chopped nuts and toss to heat through.

  3. Transfer to a flameproof dish. Season well. Place under a hot grill (broiler) for 6-8 minutes until piping hot and glazed on top.
