Italian Pasta Recipes - Creamy Pasta (Pasta Cremosa) Recipe

Ingredients                     

  • 350 g/12 oz pasta shells

  • Salt and freshly ground black pepper

  • 25 g/1 oz/2 tbsp unsalted (sweet) butter

  • 100 g/4 oz mushrooms, sliced

  • 225 g/8 oz/2 cups cooked chicken breast, cut into strips

  • 150 ml/2/3 cup double (heavy) cream

  • 100 g/4 oz/1 cup hard cheese, grated

  • 15 ml/1 tbsp chopped fresh parsley

  • 15 ml/1 tbsp chopped fresh thyme

  • 50 g/2 oz/1/2 cup Parmesan cheese, grated


Method:

  1. Cook the pasta in boiling salted water until just tender. Drain.

  2. Meanwhile, melt the butter and add the mushrooms. Fry (sauté) for 2 minutes and stir in the chicken.

  3. Cook for 5 minutes and stir in the pasta. Lower the heat and blend in the cream, grated hard cheese, parsley and thyme.

  4. Season with salt and pepper and when piping hot turn into a warmed serving dish.

  5. Sprinkle with the Parmesan cheese and serve at once.
