Italian Pasta Recipes - Crispy Fried Spaghetti (Spaghetti Fritto) Recipe

Ingredients                     

  • 225 g/8 oz spaghettini

  • 10 ml/2 tsp olive oil

  • Vegetable oil for deep-frying

  • 10 ml/2 tsp salt

  • 2.5 ml/1/2 tsp cayenne

  • 60 ml/4 tbsp Parmesan cheese, grated


Method:

  1. Cook the pasta in boiling salted water until just tender, but still firm.

  2. Drain very thoroughly, then cut into 10 cm/4 in lengths. Toss with the olive oil.

  3. Deep-fry in small batches until crisp and golden, then drain well on kitchen paper.

  4. Sprinkle with salt, cayenne and cheese. Toss together and break up any large lumps before serving.
