Elbow Pasta (Gomiti
in Crema) Recipe
Ingredients

15 ml/1 tbsp olive
oil
-
450 g/1 lb elbow
pasta
-
150 g/5 oz/2/3 cup
unsalted (sweet) butter
-
100 g/4 oz button
mushrooms, sliced
-
150 ml/2/3 cup single (light)
cream
-
2 egg yolks
-
75 g/3 oz/3/4 cup Caciocavallo or Parmesan
cheese, grated
-
Salt and freshly
ground black pepper

100 g/4 oz peas, cooked
Method:
-
Bring a large pan of salted water to the boil and
add the olive oil and the pasta. Lower the heat and
simmer for 10-12 minutes until tender.

Meanwhile,
melt half the butter in a pan and fry (sauté) the
mushrooms for 5 minutes.

Mix the cream, egg yolks
and grated cheese together and season with the salt
and pepper.

Melt the remaining butter in a pan and
pour in the cream and egg yolk mixture.

Drain the
cooked pasta and add to the cream sauce with the
peas. Stir until heated and spoon into a warmed
serving dish.
