Italian Pasta Recipes - Elbow Pasta (Gomiti in Crema) Recipe

Ingredients                 

  • 15 ml/1 tbsp olive oil

  • 450 g/1 lb elbow pasta

  • 150 g/5 oz/2/3 cup unsalted (sweet) butter

  • 100 g/4 oz button mushrooms, sliced

  • 150 ml/2/3 cup single (light) cream

  • 2 egg yolks

  • 75 g/3 oz/3/4 cup Caciocavallo or Parmesan cheese, grated

  • Salt and freshly ground black pepper

  • 100 g/4 oz peas, cooked


Method:

  1. Bring a large pan of salted water to the boil and add the olive oil and the pasta. Lower the heat and simmer for 10-12 minutes until tender.

  2. Meanwhile, melt half the butter in a pan and fry (sauté) the mushrooms for 5 minutes.

  3. Mix the cream, egg yolks and grated cheese together and season with the salt and pepper.

  4. Melt the remaining butter in a pan and pour in the cream and egg yolk mixture.

  5. Drain the cooked pasta and add to the cream sauce with the peas. Stir until heated and spoon into a warmed serving dish.
