Italian Pasta Recipes - Fettuccine with Cream (Fettuccine con Panna) Recipe

Ingredients                     

  • 1.2litres/2 pts/5 cups water

  • 10 ml/2 tsp salt

  • 350 g/12 oz fettuccine

  • 25 g/1 oz/2 tbsp unsalted (sweet) butter

  • 250 ml/8 fl oz/1 cup double (heavy) cream

  • 100 g/4 oz/1 cup Parmesan cheese, grated

  • Freshly ground black pepper


Method:

  1. Bring a pan of salted water to the boil and drop the fettuccine into the water.

  2. Reduce the heat to simmering and cook the fettuccine for 7-8 minutes until tender but still firm.

  3. Remove from the heat and drain well. Transfer to a warm serving dish.

  4. Warm the butter, cream, cheese and pepper in a saucepan for 1 minute and pour over the fettuccine. Toss and add more seasoning if required.
