Fiery Pasta Quills
(Penne Arrabiata) Recipe
Ingredients
-
30 ml/2 tbsp olive
oil
-
1 onion, chopped
-
1 garlic clove,
crushed
-
3 tomatoes, skinned
and chopped
-
15 ml/1 tbsp tomato
puree (paste)
-
1 red chili,
seeded and finely chopped
-
Salt and freshly ground
black pepper
-
350 g/12 oz penne
-
30 ml/2 tbsp
chopped fresh basil
Method:
-
Heat the oil in a
large pan and fry (sauté) the onion and garlic until
soft.

Add the tomatoes, tomato puree and
chili and
season with the salt and pepper.

Bring a large pan of salted
water to the boil and
cook
the pasta for 8-10 minutes until
tender but still firm.
-
Drain the pasta and toss into
the hot sauce. Sprinkle with the basil.
