Fishy Noodle Ring
(Gambella di Tagliatelle al Pesce) Recipe
Ingredients
-
175 g/6 oz tagliatelle
-
30 ml/2 tbsp oil
-
4 eggs, beaten
-
300 ml/1 1/4
cups milk
-
1.5 m/1/4 tsp
grated nutmeg
-
Salt
-
25 g/1 oz/2 tbsp
unsalted (sweet) butter, melted
-
1 large onion,
chopped
-
3 tomatoes, skinned
and chopped
-
10 ml/2 tsp chopped fresh parsley
-
Freshly ground
black pepper
-
450 g/1lb white
fish fillets, skinned
Method:
-
Bring a large pan of salted water to the boil and add the tagliatelle and
15 ml/1 tbsp oil.

Lower the heat and simmer
for 10 minutes until the pasta is tender but firm.
Drain.

Whisk the eggs and milk together in a bowl
and add the nutmeg, 1.5 ml/1/4 tsp salt, and
half the melted butter. Pour into a greased ring
mould (mold).

Drain the noodles and spoon evenly
into the ring mould. Put the mould into an ovenproof
dish and half-fill the dish with boiling water.

Cook
in a preheated oven at 180°C/350°F/gas mark 4
for 35 minutes until set.

Heat the remaining oil in
a pan and try (sauté) the onion for 3 minutes. Stir
in the tomatoes and cook for 20 minutes until the
sauce is thick.

Add the parsley and season with salt
and pepper. Cut the fish into 4 cm/1 1/2 in pieces and
add to the sauce.

Cook for 5-6 minutes until the
fish flakes easily with a fork. Loosen the mould and
turn on to a serving dish.

Spoon the sauce and fish
into the centre and serve.
