Italian Pasta Recipes - Green Pasta (Tagliatelle Verde) Recipe

Ingredients

  • 100 g/4 oz spinach, washed

  • 450 g/1Ib/4 cups plain (all-purpose) flour

  • 1.5 ml/1/4 tsp salt

  • 4 eggs, beaten


Method:

  1. Place the spinach in a saucepan and cook, covered for 8-10 minutes until cooked. Chop finely or puree until smooth. Drain thoroughly.

  2. Sift the flour and salt in a bowl and blend in the eggs and spinach. The green color can be altered by the quantity of spinach included in the recipe.

  3. Knead very thoroughly until smooth. Cover the bowl with a cloth and leave to rest for 30 minutes.

  4. Roll out the dough thinly and cut into strips to make noodles. Hang up to dry or place on a clean cloth over the back of a chair.

  5. The pasta can be stored in an airtight container in the fridge for several days.

  6. Cook in plenty of boiling, salted water for 3-5 minutes, depending on thickness until just tender but still with some texture. Drain and use as required.
