Ham Pasta Shells (Conchiglie
di Proscuitto) Recipe
Ingredients
-
45 ml/3 tbsp olive
oil
-
1 onion, chopped
-
2 garlic cloves,
crushed
-
100 g/4 oz Parma
ham, chopped
-
450 g/1lb tomatoes, skinned, seeded and chopped
-
60 ml/4 tbsp dry
white wine
-
Salt and freshly
ground black pepper
-
350 g/12 oz pasta shells
-
50 g/2 oz/1/2 cup
Pecorino cheese, grated

30 ml/2 tbsp
chopped fresh sage
Method:
-
Heat the oil and fry (sauté)
the onion and garlic until soft. Stir in the ham,
tomatoes, wine, salt and pepper.
-
Place the pasta
shells in a pan of salted, boiling water and cook
for 8-10 minutes, until tender, but still firm.
-
Rinse in hot water and drain well. Blend the pasta
with the ham sauce and serve sprinkled with the
cheese and sage.
