Italian Pasta Recipes - Ham Pasta Shells (Conchiglie di Proscuitto) Recipe

Ingredients                     

  • 45 ml/3 tbsp olive oil

  • 1 onion, chopped

  • 2 garlic cloves, crushed

  • 100 g/4 oz Parma ham, chopped

  • 450 g/1lb tomatoes, skinned, seeded and chopped

  • 60 ml/4 tbsp dry white wine

  • Salt and freshly ground black pepper

  • 350 g/12 oz pasta shells

  • 50 g/2 oz/1/2 cup Pecorino cheese, grated

  • 30 ml/2 tbsp chopped fresh sage


Method:

  1. Heat the oil and fry (sauté) the onion and garlic until soft. Stir in the ham, tomatoes, wine, salt and pepper.

  2. Place the pasta shells in a pan of salted, boiling water and cook for 8-10 minutes, until tender, but still firm.

  3. Rinse in hot water and drain well. Blend the pasta with the ham sauce and serve sprinkled with the cheese and sage.
