Italian Pasta Recipes - Linguini with Artichokes (Linguini con Carciofi) Recipe

Ingredients                     

  • 400 g/14 oz/1 large can artichoke hearts, drained

  • 185 g/1 small can tuna, drained

  • 350 g/12 oz linguini

  • 15 ml/1 tbsp virgin olive oil

  • 1 red (bell) pepper, sliced

  • 15 ml/1 tbsp lemon juice

  • Salt and freshly ground black pepper


Method:

  1. Coarsely chop the artichoke hearts and roughly flake the tuna.

  2. Bring a large pan of salted water to the boil and cook the linguini for 5-6 minutes.

  3. Heat the olive oil in a frying pan (skillet) and fry (sauté) the red pepper for 2 minutes. Stir in the lemon juice.

  4. Drain the pasta and return to the pan. Add the artichokes, tuna and the pepper mixture.

  5. Toss over a gentle heat. Season to taste and serve at once.
