Italian Pasta Recipes - Linguini with Garlic and Parmesan (Linguini al Aglio e Parmigiano) Recipe

Ingredients

  • 350 g/12 oz linguini

  • 350 g/12 oz/1 1/2 cups unsalted (sweet)   butter, diced

  • 175 g/6 oz/1 1/2 cups dried breadcrumbs

  • 6 garlic cloves, finely chopped

  • 100 g/4 oz/1 cup Parmesan cheese, freshly grated

  • 45 ml/3 tbsp chopped fresh parsley

Method:

  1. Cook the linguini in a large pan of boiling, salted water until just tender but still firm. Drain well.

  2. Meanwhile, melt the butter until it foams, then stir in the breadcrumbs.

  3. Cook over a low heat, stirring continuously, until golden brown. Add the garlic and cook for a further 2 minutes.

  4. Stir in the Parmesan and parsley. Pour over the cooked pasta and toss together well before serving.
