Spaghetti (Spaghetti alla Mediterraneo) Recipe
Ingredients

15 ml/1 tbsp olive
oil
-
1 garlic clove,
crushed
-
1 onion, roughly
chopped
-
2 red (bell)
peppers, sliced
-
1 yellow (bell)
pepper, sliced
-
1 aubergine
(eggplant), diced
-
1 courgette
(zucchini), diced
-
3 tomatoes, skinned
and chopped
-
30 ml/2 tbsp tomato puree (paste)
-
Salt
and freshly ground black pepper
-
15 ml/1 tbsp chopped
fresh basil or oregano
-
350 g/12 oz
spaghetti
Method:
-
Heat the oil in a frying pan (skillet) and cook the garlic and onion for
2 minutes.

Add the peppers, aubergine and courgette
and fry (sauté) for 3 minutes.

Blend in the tomatoes
and tomato puree. Season well with the salt and
pepper and blend in the basil.

Reduce the heat and
cook for 10 minutes, stirring occasionally. Bring a
large pan of salted water to the boil and add the
spaghetti.

Cook for 8-10 minutes. Drain well and
return the pasta to the pan. Pour in the hot sauce
and heat before serving.
