Italian Pasta Recipes - Mediterranean Spaghetti (Spaghetti alla Mediterraneo) Recipe

Ingredients                 

  • 15 ml/1 tbsp olive oil

  • 1 garlic clove, crushed

  • 1 onion, roughly chopped

  • 2 red (bell) peppers, sliced

  • 1 yellow (bell) pepper, sliced

  • 1 aubergine (eggplant), diced

  • 1 courgette (zucchini), diced

  • 3 tomatoes, skinned and chopped

  • 30 ml/2 tbsp tomato puree (paste)

  • Salt and freshly ground black pepper

  • 15 ml/1 tbsp chopped fresh basil or oregano

  • 350 g/12 oz spaghetti


Method:

  1. Heat the oil in a frying pan (skillet) and cook the garlic and onion for 2 minutes.

  2. Add the peppers, aubergine and courgette and fry (sauté) for 3 minutes.

  3. Blend in the tomatoes and tomato puree. Season well with the salt and pepper and blend in the basil.

  4. Reduce the heat and cook for 10 minutes, stirring occasionally. Bring a large pan of salted water to the boil and add the spaghetti.

  5. Cook for 8-10 minutes. Drain well and return the pasta to the pan. Pour in the hot sauce and heat before serving.
