Italian Pasta Recipes - Neapolitan Macaroni (Maccheroni alla Neapoletana) Recipe

Ingredients    

  • Oil for frying

  • 100 g/4 oz/2/3 cup bacon, rinded and diced       

  • 1 onion, chopped

  • 2 celery sticks, chopped

  • 2 carrots, chopped

  • Salt and freshly ground black pepper

  • 15 ml/1 tbsp chopped fresh basil

  • 15 ml/1 tbsp chopped fresh tarragon

  • 3 tomatoes, skinned and sliced

  • 25 g/1 oz/2 tbsp unsalted (sweet) butter

  • 225 g/8 oz macaroni

  • 75 g/3 oz/1/4 cup Parmesan cheese, grated


Method:

  1. Heat the oil and fry (sauté) the bacon, then brown the onion, celery and carrots. Add the salt, pepper, basil and tarragon.

  2. Stir in the tomatoes and simmer for 5 minutes. Pour in enough water just to cover the mixture and continue to simmer for 40 minutes.

  3. Stir in the butter. Bring a pan of salted water to the boil and add the macaroni.

  4. Cook for 10-15 minutes until tender but still firm. Drain and turn into a deep serving dish.

  5. Pour over the sauce. Serve with the Parmesan cheese.
