Macaroni (Maccheroni alla Neapoletana) Recipe
Ingredients

Oil for frying

g/4 oz/2/3 cup bacon, rinded and diced

1 onion, chopped
-
2 celery sticks,
chopped
-
2 carrots, chopped
-
Salt and freshly
ground black pepper
-
15 ml/1 tbsp chopped fresh basil
-
15 ml/1 tbsp chopped
fresh tarragon
-
3 tomatoes, skinned and sliced

25 g/1 oz/2 tbsp
unsalted (sweet) butter

225 g/8 oz macaroni
-
75 g/3 oz/1/4 cup Parmesan cheese, grated
Method:

Heat the oil and fry (sauté) the bacon, then brown the onion, celery and
carrots. Add the salt, pepper, basil and tarragon.

Stir in the tomatoes and simmer for 5 minutes. Pour
in enough water just to cover the mixture and
continue to simmer for 40 minutes.

Stir in the
butter. Bring a pan of salted water to the boil and
add the macaroni.

Cook for 10-15 minutes until
tender but still firm. Drain and turn into a deep
serving dish.

Pour over the sauce. Serve with the
Parmesan cheese.
