Noodles with Chick
Peas (Pasta con Ceci) Recipe
Ingredients
-
225 g/8 oz/1 1/3 cup
dried chick peas (garbanzos), soaked
overnight
-
60 ml/4 tbsp olive oil
-
50 g/2 oz Pancetta
or bacon, rinded and chopped
-
15 ml/1 tbsp chopped
fresh oregano
-
1 garlic clove, chopped
-
1.5 liters/2 1/2
pts/6 cups stock

225 g/8
oz fettuccine
-
Salt and freshly
ground black pepper
Method:

Drain the chick peas
and pour into a large saucepan. Add enough water to
cover and 15 ml/1 tbsp oil.

Cover with a lid, bring
to the boil and boil rapidly for 10 minutes, then
reduce the heat and simmer for 3 hours until tender.

Remove from the heat and drain. Heat 30 ml/2 tbsp
olive oil and fry (sauté) the pancetta, oregano and
garlic for 5 minutes.

Pour in the stock and the
drained chick peas. Cook for 10 minutes, stirring.

Add the fettuccine and boil rapidly until tender.
Season with the salt and pepper and pour into a
serving dish.
