Italian Pasta Recipes - Nutty Vermicelli (Vermicelli alla Noce) Recipe

Ingredients                     

  • 350 g/12 oz vermicelli

  • 90 ml/6 tbsp virgin olive oil

  • 3 garlic cloves, chopped

  • Salt and freshly ground black pepper

  • 14 walnuts, shelled, peeled and finely chopped

  • 75 g/3 oz/3/4 cup Parmesan cheese, grated

  • 15 ml/1 tbsp chopped fresh parsley


Method:

  1. Add the pasta to a large saucepan of boiling water and cook for 5-6 minutes. Drain and return to the saucepan.

  2. Heat the oil and add the garlic. Cook for 1 minute and stir in the nuts.

  3. Place the pasta in a warmed serving dish and pour over the sauce.

  4. Sprinkle with the cheese and parsley and serve immediately.

Note: use fresh walnuts if possible.
