Nutty Vermicelli
(Vermicelli alla Noce) Recipe
Ingredients

350 g/12 oz
vermicelli
-
90 ml/6 tbsp virgin
olive oil
-
3 garlic cloves,
chopped
-
Salt and freshly
ground black pepper

14 walnuts, shelled, peeled and
finely chopped

75 g/3 oz/3/4 cup
Parmesan cheese, grated

15 ml/1 tbsp chopped
fresh parsley
Method:

Add the pasta to a large saucepan of boiling water and cook for 5-6
minutes. Drain and return to the saucepan.

Heat the
oil and add the garlic. Cook for 1 minute and stir
in the nuts.

Place the pasta in a warmed serving
dish and pour over the sauce.

Sprinkle with the
cheese and parsley and serve immediately.
Note: use
fresh walnuts if possible.
