Italian Pasta Recipes - Pasta with Bacon Sauce (Pasta all' Amatriciana) Recipe

Ingredients                 

  • 350 g/12 oz macaroni or bucatini

  • Salt

  • 8 streaky bacon rashers (slices), rinded

  • 15 ml/1 tbsp olive oil

  • 1 small onion, chopped

  • 45 ml/3 tbsp grated Pecorino cheese

  • 30 ml/2 tbsp chopped fresh basil


Method:

  1. Cook the pasta in a large pan of boiling, salted water. Grill (broil) the bacon until crisp, crumble into pieces and set aside.

  2. Heat the oil in a frying pan (skillet) and fry (sauté) the onion for 5 minutes.

  3. Add the bacon and cheese to the pan and keep the mixture warm. Drain the pasta and transfer to a bowl.

  4. Pour over the sauce, toss well and sprinkle with the basil.
